Basil comes in a wide variety. The flavors change due to the oils in each variety. Basil belongs to the mint family, so no wonder there are so many different varieties. Here is how I use some of my favorite varieties: The sweet basil is used in pasta sauces and dishes. The basil with variegated leaves (pesto perpetuo) is used for pesto. Thai basil is used in lemonade all summer and fall long. Lime basil is harvested, dried and used in seafood dishes all year long. My absolute favorite variety is not pictured, but it is called holy basil. I dry the leaves and add it to my teas. Basil loves the heat and will continue to grow as long as you actually harvest it. In all honesty I almost become overrun by basil during the summer months. That’s a problem I love having. The pollinators love it, and it’s a favorite in the kitchen. I mean what’s not to love about basil? There’s a variety for everyone.
